Local eatery spices up a dash of Italy and a dollop of Appalachia with a big bite of Arkansas Delta
LAKE VILLAGE, AR - When Italian cooking migrates to Arkansas by way of Appalachia, the results are nothing short of delicious. Or so say LakeShore Cafe patrons who've tried the new recipe cafe manager, Charles Faulk, IV, brought home from a visit to Kentucky.
Entertained by friends Regina and Toby Cole in their 120-year-old farmhouse, Faulk had the pleasure of eating what his palate recognized instantly as "real" Italian spaghetti. He explained, "During my stint in the Army I spent three years in Italy, and my favorite dish over there was spaghetti and meatballs. The Italians do something really special to it.”
When Faulk expressed his surprise at how much Regina’s recipe tasted like the real thing, he learned that her maiden name is Mabelitini and her Italian grandparents had immigrated to Appalachia, where both her father and grandfather worked as coalminers. Today, Regina delights in cooking the authentic Italian dishes she learned in her mother’s kitchen.
Another surprise for Faulk was the recipe’s simplicity. He said, "The spaghetti recipe passed down in my family calls for the sauce to simmer 8 to 10 hours. But this spaghetti sauce is ready in 45 minutes! I think the secret’s in the garlic. It has five times as much, and amazingly, it’s not at all overwhelming."
Faulk added, “Regina’s meatball recipe calls for a mixture of ground beef and venison, but our LakeShore Cafe cooks have added a big bite of Arkansas Delta to the mix by substituting sausage for the venison.”
Sunday Menu Feature Regina's mother and grandmother's “real” Italian spaghetti and meatballs will be a Sunday menu feature at LakeShore Cafe on May 21st. Join us for lunch from 11 to 2 and taste what all the fuss is about.
LakeShore Cafe is located at 4403 Highway 82 East, Lake Village, Arkansas. Hours are 11 to 2 and 5 to 9, weekdays, 11 to 10 on Saturdays and 11 to 2 on Sundays. Closed Sunday evenings. Live music begins at 6:30 on Friday and Saturday evenings.
